This quick, healthy and delicious whipped cream is perfect to use on desserts or served along side fresh fruit!

the30clean - Because this recipe calls for an added sweetener, it’s only allowed during the Holiday Challenge, or you can omit the honey.
Adjust serving size:

  • 1 1/2 cups full fat coconut milk
  • 1/2 teaspoon pure vanilla or 1/8 teaspoon vanilla bean powder
  • 1 teaspoon raw honey use maple syrup for vegan - omit for AIP

How to Make:

  1. Place a can of full-fat coconut milk in the refrigerator in advance so that the cream can separate from the milk.
  2. Chill your mixing bowl and whisk attachment in the freezer for about 10 minutes before starting.
  3. Place the coconut cream into the mixing bowl - the cream is the hardened portion that has risen to the top of the can, reserve the liquid portion for another use {hello smoothie}. Add the vanilla and raw honey to the cream and whip with a hand-mixer for about 3-5 minutes. Place the bowl in the fridge until ready to serve.
  4. Store in an airtight container and refrigerate for up to a week. Just whisk for a few seconds, each time, before serving.

When you refrigerate a can of full fat coconut milk overnight, the coconut cream separates from the coconut water and rises to the top. Occasionally, you may get a dud can that doesn't separate well, and the recipe won’t turn out. For this reason, I always refrigerate two cans - so I have a backup!

Native Forest is a great choice, or Thai Kitchen. Natural Value will not be a good choice for this recipe, because it doesn't separate well.
