Waldorf Salad in Mason Jars
The lemon zest gives this easy salad quite a zip and the apples & nuts offer a nice crunch. It’s light, refreshing and effortless to assemble!

Note: This recipe calls for two wide-mouth, quart size mason jars. If you don’t have any, you may use any other container of choice, but keep in mind your salad will stay fresh for longer if it’s in a glass container.
Adjust serving size: 


  • 1 apple - any color cored and diced
  • 4 celery ribs sliced thin
  • 1 head bibb or butter lettuce chopped
  • 2 tablespoons raisins
  • 2 tablespoons raw unsalted walnuts
  • Roast Chicken Breast
  • 6 oz boneless skinless chicken breast roasted, cooled, sliced & diced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Waldorf Dressing
  • 1/4 cup mayonnaise
  • 1/4 cup unsweetened almond milk or non-dairy milk of choice
  • 1 tablespoon avocado oil
  • 1/2 lemon - meyer if available 1 teaspoon of zest and 1 tablespoon of juice
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon black pepper

How to Make:

  1. Prepare the chicken breast & dressing in advance.
Roast Chicken Breast
  1. Preheat oven to 400° and place the rack in the middle of the oven.
  2. Rinse and pat the chicken dry. Place it on a baking sheet and sprinkle with salt & pepper. Roast for about 20 minutes. This should be sufficient cooking time, unless the breasts are rather large.
  3. The best way to make sure they’re done is to use an instant-read thermometer. It should read 165° when inserted into the thickest part.
  4. Slice the chicken into 1/2" cubes and place it in the refrigerator to cool, prior to adding to the salad.
Waldorf Dressing
  1. Prepare dressing by adding all of the ingredients to a small mixing bowl and whisk to combine.
  1. Prep the remaining vegetables.
  2. Fill your jars, adding half the ingredients to each jar. Start with adding the salad dressing, and then layer in order of apple, celery, cooled chicken breast, lettuce, raisins and walnuts. If you plan to eat straight from the jar, leave about an inch of room at the top so you have room to shake the ingredients before eating.
  3. When ready to eat, shake well and eat straight from the jar {or transfer to a salad bowl}.
