This easy, flavorful coconut chickpea curry is ready in no time and packed with flavor!

How to Make:

  1. Soak and prepare the chickpeas in advance, if they're not canned.
  2. Place a large sauce pan over medium-high heat, and then add the coconut oil, onion and garlic. Sauté until the onion becomes translucent - a few minutes. Reduce the heat to low.
  3. Add the coconut milk, aminos, curry powder and salt to a small bowl and whisk until combined.
  4. Add the coconut milk mixture to your saucepan, and then add the chickpeas, tomatoes and chopped basil. Stir to combine, and warm over medium-heat until steaming and heated throughout - about 10 minutes.
  5. Garnish with chopped cilantro and freshly squeezed lime juice.
