Treat yourself to this colorful flavor-bomb and you won't be disappointed. It's simple to make and will have you feeling like a gourmet chef in no time!

Did you know… Bell pepper is not only an excellent source of carotenoids, but also a source of over 30 different members of the carotenoid nutrient family. A recent study from Spain took a close look at vitamin C, vitamin E, and six of these carotenoids (alpha-carotene, beta-carotene, lycopene, lutein, cryptoxanthin and zeaxanthin) in all commonly eaten foods and found that only two vegetables contained at least two-thirds of all the listed nutrients. The winners were sweet bell pepper and tomato!

Note: You can also use this recipe just as a base and get creative with your ingredients. Try adding grated onion, zucchini, spinach, kale, chard, peppers, mushrooms, or sausage… Make it fun for the kids and let them decide!
Adjust serving size: 


  • 1 bell pepper - any color center slices only
  • 4 eggs scrambled
  • 4 thick cut uncured bacon slices diced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 teaspoons extra-virgin olive oil divided
  • 1 cup baby spinach
  • 1 carrot peeled & sliced thin
  • 2 baby persian cucumber sliced thin
  • 1/4 lemon - meyer if available use 1 teaspoon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper

How to Make:

  1. Slice two 1” center-slice rings from each pepper and remove the seeds and core. Set aside. Store remaining peppers for future use.
  2. Crack the eggs into a medium-size mixing bowl and whisk, then stir in the diced bacon and seasonings.
  3. Warm a teaspoon of oil in a large heavy skillet over low heat, and then place the pepper rounds into the skillet, gently press them down to sear the bottom. Pour the egg mixture into the pepper rounds, cover and cook for about 10 minutes, or until the eggs are fully cooked.
  4. Serve with fresh spinach, sliced carrot and cucumbers. Adults may want to dress the veggies with a little olive oil, lemon, sea salt & pepper.
