So-Delicious Tofu Scramble
This is a fantastic replacement for omelets and scrambled eggs. It's protein-packed, filling, and full of flavor!

Did you know... Tofu is an excellent source of amino acids, iron, calcium and other micro-nutrients, it's a versatile ingredient with many health benefits.

This recipe is the one-and-only exception to my soy-free rule, mostly because it reminds me of my childhood! Friends- please remember to look for organic, non-gmo tofu.

Because this recipe calls for soy, it’s not allowed while on a challenge.
Adjust serving size: 

Ingredients:

  • 1 teaspoon virgin coconut oil or preferred oil
  • 1/4 cup onion - any color diced
  • 1 garlic clove minced
  • 4 oz organic non-gmo extra-firm tofu crumbled
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika or regular
  • 1/4 teaspoon ground turmeric
  • 2 tablespoons spring water
  • 1 tablespoon nutritional yeast
  • 1 cup baby spinach
  • 1 roma tomato diced
  • 1/4 teaspoon sea salt or to taste

How to Make:

  1. Place a large pan over medium-heat, add the coconut oil, onion and garlic, and then sauté until the onion starts to become translucent.
  2. Add the crumbled tofu and cook for about 10 minutes, stirring occasionally.
  3. Meanwhile, place the cumin, paprika, and turmeric into a small bowl, add a couple tablespoons of spring water, and then stir to combine. Pour the seasoning blend into the pan, sprinkle the nutritional yeast over the top, and then stir well to combine the flavors.
  4. Add the tomato and spinach, and then cook for another couple minutes - just enough to slightly wilt the spinach.
    Plate and season with sea salt to taste.
