Slow-Roasted Carnitas Tacos
Warm spices, fresh oranges, and a low & slow cook time makes this carnitas dish tender, juicy, and full of flavor!

Make it fun for the kiddos, and let them create their own tacos!

Ingredients:

  • 3 lbs boneless pork shoulder
  • 2 cups yellow onion sliced
  • 3 roma tomato diced / omit for AIP
  • 2 orange peeled and diced
  • 2 cups broth - any kind
  • Taco Ingredients
  • 1 head bibb or butter lettuce
  • gluten free tortillas - optional omit for AIP
  • 2 avocado - ripe but firm sliced
  • 1 bunch radish diced
  • 1 cup cilantro chopped
  • 1 lime sliced
  • Carnitas Pork Rub
  • 1 tablespoon sea salt
  • 1 teaspoon ground cumin omit for AIP
  • 1/2 teaspoon black pepper omit for AIP
  • 1 tablespoon dried Italian herbs
  • 1/2 teaspoon ground cinnamon
  • 4 garlic cloves minced

How to Make:

  1. Preheat oven to 425° and place the rack in the middle of the oven.
  2. Add the pork rub ingredients to a small bowl, mix and set aside.
  3. Trim the excess fat from the pork and discard. Rub the mixture all over the pork.
  4. Assemble the onion, tomato, broth and pork into a roasting pot {or pan}. Roast for 20 minutes, and then reduce the heat to 325°. Continue to cook until an instant-read thermometer inserted into the shoulder reads 185°, about 4 hours. Slow-Roasted Carnitas Tacos
  5. The meat is done when it literally falls off the bone.
  6. Let the meat cool enough to handle, then lift from the juices and place onto a cutting board. Remove the bone, then shred. To shred, insert two forks into opposite edges of the meat and pull in opposite directions. Repeat this process until all of the meat has been shredded.   7. Transfer the carnitas to a serving bowl, stir the au jus {juices} in the roasting pan, then add about a half-cup to your carnitas, along with some sea salt, to taste.
  8. Using a slotted spoon, remove the onion, tomato, and orange mixture, then place into a separate serving bowl and season with sea salt to taste. Discard the remaining juices and soak your stoneware.
  9. Assemble your tacos {using lettuce leaves or gluten-free tortillas} by layering carnitas, stewed vegetables, sliced avocado, and then top with diced radish, cilantro and a squeeze of lime.Slow-Roasted Carnitas Tacos
