Slow-Cooked Chicken & Rice Verde Tacos
Loaded with chicken breast, salsa verde and rice, this healthy slow-cooked chicken is incredibly flavorful and extremely easy to make. Just place it all in the crock pot and walk away!

Adjust serving size: 


  • 2 cups broth - any kind
  • 1 cup dry rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 2 lbs boneless skinless chicken breast
  • 16 oz mild salsa verde
  • Taco & Side Ingredients
  • 1 head bibb or butter lettuce
  • gluten free tortillas - optional
  • 1 avocado - ripe but firm sliced
  • 1 roma tomato diced

How to Make:

  1. Place the chicken broth, rice and seasonings in the slow-cooker and mix thoroughly. Add the chicken breasts and salsa verde. Cover and cook on the low setting for 8 hours, or on high for 4 hours.Slow-Cooked Chicken & Rice Verde Tacos
  2. The chicken is ready when it shreds easily with a fork. Remove the chicken with a slotted spoon and place onto a cutting board. Replace the cover to keep the rice warm.Rice Verde
  3. To shred the chicken, insert two forks into the edge of the breast and pull in opposite directions to get long, thin shreds. Repeat this process until all of the chicken has been shredded.Slow-Cooked Chicken & Rice Verde Tacos
  4. Prepare your tacos {using lettuce leaves or gluten-free tortillas} by layering the rice, chicken, sliced avocado, and then top with diced tomato.
