Roasted Pumpkin with Garlic & Rosemary

This savory pumpkin dish is an easy and versatile recipe. Roasted pumpkin with garlic and rosemary is a perfect side dish for most any meal.

Did you know... Pumpkin is incredibly rich in vital antioxidants, and vitamins. It carries an abundance of vitamin A, and flavonoid poly-phenolic antioxidants such as lutein, xanthin, and carotenes.
Adjust serving size: 


  • 1 small sugar pumpkin not a carving pumpkin
  • unbleached parchment paper optional
  • Garlic & Rosemary Sauce
  • 2 tablespoons avocado oil
  • 1 teaspoon fresh rosemary chopped very fine
  • 2 garlic cloves minced - use a garlic press or chop very fine
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper omit for AIP

How to Make:

  1. Preheat oven to 400° and place the rack in the middle of the oven. Line a large baking sheet with parchment paper.
  2. Prepare the sauce by adding all of the ingredients into a small mixing bowl and stir until a nice paste forms. Set aside.
  3. Carefully, using a very sharp chef’s knife, slice the stem off, and then slice the pumpkin in half. Use a large metal spoon or an ice cream scoop to remove the pulp and the seeds - save the seeds to roast, if you'd like.
  4. Slice each half of the pumpkin into four 1" thick moon-shaped slices, discarding the ends.
  5. Cover the pumpkin slices with the garlic and rosemary sauce, and then arrange them in a single layer on the prepared baking sheet.
  6. Roast the pumpkin slices until fork-tender, about 30 minutes, flipping them midway through baking. Serve immediately.


If you use a thin-skinned, small sugar pumpkin for this recipe, you can absolutely eat the skin {its safe and edible} or you can peel it off prior to serving. I usually leave it on unless it’s very thick.
