Roasted Brussels with Sliced Almonds & Lemon Zest

Roasted brussels are tossed with lemon zest & sliced almonds in this simple and delicious side dish!

Did you know… Brussels sprouts are packed with vitamins A, C and K, as well as dietary fiber and potassium.
Adjust serving size: 


  • 8 oz brussels sprouts ends trimmed
  • 1 tablespoon avocado oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper omit for AIP
  • 2 tablespoons raw unsalted sliced almonds omit for AIP
  • 1/2 lemon - meyer if available zest only

How to Make:

  1. Preheat oven to 400° and place the rack in the middle of the oven.
  2. Trim the brussels - you'll want to slice them in half or quarter them if they are any larger than an inch around.
  3. Coat the brussels with avocado oil, salt & pepper and place them onto a baking sheet in a single layer. Roast in the oven for 20 minutes, or until browned and tender. They are done when they have shrunk a bit and turned golden brown on the edges.
  4. Garnish the roasted brussels with sliced almonds and fresh lemon zest, and serve immediately.
