Quinoa Salad with Cashews, Pomegranate & Fresh Mint
You'll love this healthy, refreshing, and extremely satisfying Vegan salad! Perfect for a lunch on-the-go, or a dinner side!

Did you know... Often referred to as the supergrain, quinoa (KEEN-wah) is high in fiber and high-quality protein. In fact, it contains more protein than any other grain and also packs in iron and potassium.
Adjust serving size: 


  • 1 cup whole grain quinoa cooked & cooled
  • 2 cups spring water
  • 1/2 teaspoon sea salt
  • 1/2 cup raw unsalted cashews
  • 1 cup pomegranate seeds
  • 1/4 cup fresh mint sliced thin
  • Dressing
  • 1/4 cup extra-virgin olive oil
  • 1/2 lemon - meyer if available use zest & 2 tablespoons juice
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon fresh ground pepper or to taste

How to Make:

  1. Rinse the quinoa and drain. Add the quinoa, water and salt to a medium saucepan. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes, or until the water is absorbed, and the quinoa is light and fluffy.
    Spread the quinoa onto a plate and place in the refrigerator to cool.
  2. Meanwhile, prepare the dressing by placing all of the ingredients into a small mixing bowl, and then whisk to combine.
  3. Add the cashews and pomegranate seeds to the cooled quinoa and toss. Drizzle the dressing over mixture, add the fresh mint and then toss again lightly.
