Prosciutto Wrapped Asparagus

Prosciutto-wrapped asparagus, roasted in the oven until crisp... such an easy way to make your asparagus extra-special!

Did you know… Asparagus is one of the most nutritionally well-balanced vegetables in existence. It leads nearly all produce items in the wide array of nutrients it supplies for a healthy diet.
Adjust serving size: 

Ingredients:

  • 1 bunch asparagus
  • 4 oz sliced prosciutto
  • 1 teaspoon avocado oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper omit for AIP

How to Make:

  1. Preheat oven to 450° and place the rack in the middle of the oven.
  2. Rinse and pat dry the asparagus. Slice the tough part of the ends off and coat lightly with oil - concentrating on the tips.
  3. Slice prosciutto slices in half lengthwise. Wrap each spear of asparagus with a strip of sliced prosciutto. Ensuring that the prosciutto wraps around the asparagus tightly.
  4. Lay the wrapped asparagus spears on a parchment lined baking sheet and sprinkle with salt & pepper.
  5. Bake the asparagus for approximately 10 minutes - the time depends on the size. When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

Notes:

Lemon zest or some grated parmesan are great additions to this dish!
