Piña Wholada
This recipe is an irresistible creamy slushy blend that includes coconut, pineapple and avocado. Truly a Piña Colada you can feel great about!

Did you know... Avocados are considered a “Super Food” because they are so rich in nutrients, vitamins and minerals. They are also a good source of monounsaturated fatty acids and are low in sugar.
Adjust serving size: 

Ingredients:

  • 1 cup light coconut milk
  • 4 oz frozen pineapple
  • 1/4 avocado - ripe but firm
  • 1 egg - or you may use almond butter raw, very fresh - omit for AIP
  • 1 cup baby spinach
  • 1/8 teaspoon monk fruit powder optional sweetener
  • 6 ice cubes plus or minus
  • 1 teaspoon unsweetened finely shredded coconut

How to Make:

  1. Place all ingredients in the order listed into a high-powered blender or Vitamix and blend on high.
    Depending on the power of your blender, you may need to add a little extra liquid to thin out your smoothie and get a nice and creamy consistency.
  2. Drink immediately.

Notes:

Fresh, raw eggs are a great option if you're comfortable with them, if not, add a couple tablespoons of raw almond butter!
