One Pot Chicken & Rice Verde Tacos

Slow-Cooked Chicken & Rice Verde Tacos
Loaded with chicken breast, salsa verde and rice, this healthy one-pot chicken is incredibly flavorful and extremely easy to make!

Did you know... Black beans are very high in fiber and protein, and rich with vitamins and minerals like vitamin A, calcium, iron, and manganese.

Pairs well with a side of black beans.

Ingredients:

  • 1 cup dry rice rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 2 cups broth - any kind
  • 2 lbs boneless skinless chicken breast
  • 16 oz mild salsa verde
  • Taco & Side Ingredients
  • 1 head bibb or butter lettuce
  • gluten free tortillas - optional
  • 1 avocado - ripe but firm sliced
  • 1 roma tomato diced

How to Make:

  1. Warm a large heavy-pot or dutch oven {something with a lid} over medium-high heat. Add the rice, seasonings and chicken broth into the pot and mix thoroughly. Bring to a boil, then reduce the heat to low and add the chicken breasts and salsa verde. Slow-Cooked Chicken & Rice Verde Tacos
  2. Cover and simmer for 45 minutes until the rice is tender and the chicken shreds easily with a fork.
  3. Remove the chicken with a slotted spoon and place onto a cutting board. To shred, insert two forks into the edge of the breast and pull in opposite directions to get long, thin shreds. Repeat this process until all of the chicken has been shredded.Slow-Cooked Chicken & Rice Verde Tacos
  4. Prepare your tacos {using lettuce leaves or gluten-free tortillas} by layering the rice, chicken, sliced avocado, and then top with diced tomato.
