Mason Jar Salad with Quinoa
One of the great things about this salad is that it doesn’t wilt, making it an excellent choice to prepare in advance!

Did you know... Often referred to as the supergrain, quinoa (KEEN-wah) is high in fiber and high-quality protein. In fact, it contains more protein than any other grain and also packs in iron and potassium.

Use store-bought dressing or choose from these amazing homemade dressings, the champagne vinaigrette is the perfect dressing for this salad!

Note: This recipe calls for two wide-mouth, quart size mason jars. If you don’t have any, you may use any other container of choice, but keep in mind your salad will stay fresh for longer if it’s in a glass container.
Adjust serving size: 

Ingredients:

  • 1/2 cup whole grain quinoa cooked & cooled
  • 1/2 head cauliflower - any color sliced into small florets
  • 1 zucchini sliced & quartered
  • 1/2 cup yellow bell pepper diced into ½” pieces
  • 1 carrot sliced & quartered
  • 4 radish sliced & quartered
  • 1/4 cup raw unsalted pumpkin seeds

How to Make:

  1. Rinse the quinoa and drain. Add the quinoa, water and salt to a medium saucepan. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes, or until the water is absorbed, and the quinoa is light and fluffy. Spread the quinoa onto a plate and place in the refrigerator to cool.
  2. Prep the veggies and begin filling your jars - adding half of the ingredients to each jar.
    Start with the dressing {I highly recommend making the champagne vinaigrette!!}, then layer in order of cauliflower, zucchini, bell pepper, carrot, radish, 1/2 cup of quinoa and top with the pumpkin seeds.
  3. Upon serving, shake well and transfer to a salad bowl. Or, if you would like to eat straight from your mason jar, leave a few inches of room at the top so you have room to shake and combine the ingredients before eating.
