Herbed Mushroom, Avocado & Goat Cheese Omelet

Some people are intimidated by omelets, but trust us: if you can make scrambled eggs, you can make an omelet. Omelets can give new life to leftovers, and they're an excellent way to get several food groups into one meal!

Did you know… Eggs are a great source of protein! Numerous vitamins, including A, potassium and several B's, are packed into this oval-shaped staple!
Adjust serving size: 

Ingredients:

  • 1 teaspoon ghee - or grass fed butter divided
  • 2 button mushrooms sliced thin - leftovers are great!
  • 1/8 teaspoon sea salt
  • 2 eggs scrambled
  • 2 tablespoons unsweetened almond milk or non-dairy milk of choice
  • 1/4 cup crumbled goat cheese
  • 1/4 avocado - ripe but firm diced into ½” pieces
  • 1/2 teaspoon fresh parsley - or herbs of choice

How to Make:

  1. Warm a 1/2 teaspoon of ghee in an 8" skillet over medium heat.
  2. Add the mushrooms and a pinch of sea salt and sauté for a couple minutes until they begin to soften. Remove from the pan and set aside.
  3. Scramble the eggs along with the milk.
  4. Add the other half of ghee to the skillet, reduce the heat to medium-low, and then pour the scrambled eggs into the skillet. Don't stir - let the eggs cook for a couple minutes or until the bottom starts to set. Using a spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left.
  5. Now gently flip the egg over, using your spatula to ease it over. Add the goat cheese and mushrooms and continue to cook until the egg is cooked throughout.
  6. Plate your masterpiece; add the avocado and fresh parsley {or herbs choice} and season to your liking. With your spatula, lift one edge of the egg and fold it across and over, so that the edges line up. Viola! Omelet is served!
