Grilled Zucchini with Fresh Herbs & Balsamic

This grilled zucchini recipe is a sure crowd pleaser served hot or cold, and even better the next day so make some extra!

Adjust serving size: 


  • 2 zucchini - or 1 giant sized sliced
  • 1 teaspoon avocado oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon red pepper flakes omit for AIP
  • Herb Sauce
  • 2 tablespoons extra-virgin olive oil
  • 1/2 lemon - meyer if available use 1 tablespoon juice
  • 1 tablespoon fresh mint chopped fine - plus extra for garnish
  • 1 tablespoon fresh basil chopped fine
  • 1 tablespoon cilantro chopped fine
  • 1/2 teaspoon sea salt

How to Make:

  1. Prepare the grill for cooking using medium-heat. You may also roast the zucchini slices in the oven. For this option, preheat the oven to 400° and place the rack in the middle of the oven, then roast for 10-15 minutes.
  2. Prepare the herb sauce by adding all ingredients to a small mixing bowl and stir well to combine. Set aside.
  3. Coat the zucchini with avocado oil, and then grill them until just charred but still slightly crisp, only about 3-4 minutes per side.
  4. Plate the zucchini, drizzle with the herb sauce & balsamic, and then garnish with red pepper flakes and fresh mint.
