This quick and easy smoothie bowl has all the right ingredients, which makes it both delicious and satisfying!

Did you know… Avocados are considered a “Super Food” because they are so rich in nutrients, vitamins and minerals. They are also a good source of monounsaturated fatty acids and are low in sugar.
Adjust serving size: 

Ingredients:

  • 1/2 cup light coconut milk
  • 1/2 lemon - meyer if available use 1 tablespoon juice
  • 1 baby persian cucumber about 4”
  • 1/4 banana sliced & frozen
  • 1/4 green apple cored
  • 3 kale leaves stems removed
  • 1/4 cup fresh parsley
  • 1/8 teaspoon monk fruit powder optional sweetener
  • 1 tablespoons ground flax seed
  • 2 tablespoons collagen - or raw shelled hemp seeds
  • 6 ice cubes plus or minus
  • Toppings
  • 1/4 cup blackberries
  • 1 tablespoon unsweetened shredded coconut
  • 1/4 banana
  • 1 tablespoon raw unsalted pumpkin seeds

How to Make:

  1. Place all ingredients in the order listed into a high-powered blender or Vitamix and blend on high. Depending on the power of your blender, you may need to add a little extra liquid to thin out your smoothie and get a nice and creamy consistency.
  2. Pour into a bowl and add the toppings.
