Fresh green beans wrapped in bacon make a beautiful presentation and an extra-special side dish! These are easy enough for a weeknight meal yet fancy enough to impress your guests!

Did you know… Green beans are an excellent source of protein, calcium, dietary fiber, iron and several other essential nutrients. They have an impressive amount of antioxidants and even provide a rich source of Omega-3 fats too.
Adjust serving size: 

Ingredients:

  • 6 oz green beans ends trimmed
  • 1 thick cut uncured bacon slice
  • 1/4 teaspoon avocado oil
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper omit for AIP
  • 1/4 lemon - meyer if available use 1 teaspoon juice

How to Make:

  1. Preheat oven to 400° and place the rack in the middle of the oven.
  2. Rinse and pat dry the green beans. Trim the ends and coat lightly with oil, and then divide the green beans into two bundles.
  3. Slice the bacon in half and wrap each bundle with a strip of bacon. Ensuring that the bacon wraps around the green beans tightly with the seam on the bottom.
  4. Lay the bundles onto a parchment lined baking sheet and sprinkle with salt & pepper.
  5. Bake the bundles for approximately 20 minutes. When done, the green beans will be bright green and easily pierced with a fork, and the bacon will be crisped around the edges.
  6. Plate and garnish with a squeeze of lemon.
