Grain-Free Granola
This delicious grain-free granola includes nuts, seeds, currants and a bit of maca root.

Enjoy on its own as a trail mix, or topped with fresh fruit, berries, or non-dairy milk of your choice.

Did you know.... Maca root has an earthy, nutty and slightly sweet taste that has many benefits. It's been known to help balance hormones, and the vitamin C and zinc improve energy and boost the immune system.

Yields approximately twelve 1/4 cup servings.

How to Make:

  1. Preheat oven to 350° and place the rack in the middle of the oven.
  2. In a large bowl, add the nuts, seeds, ground flax and maca root, mix together.
  3. In a small bowl, add the melted coconut oil, spices and salt, then mix together.
  4. Add the coconut oil to the seed mixture and stir well, ensuring that all of the seed mixture is well coated.
  5. Spread the mixture evenly onto a baking sheet and roast for 10 minutes.
  6. Remove the granola from the oven, mix well and spread out evenly again onto the baking sheet.
  7. Place the granola back into the oven for another 10 minutes.
  8. Remove the granola from the oven, add the currants, mix well and spread out evenly again onto the baking sheet.
  9. Place the granola back into the oven and roast for another 5 minutes.

Notes:

Important: Since all ovens vary, check often to make sure it does not burn!

Chill before eating and store in an airtight container in the refrigerator.
