Make some extra & throw them into a breakfast frittata or an afternoon salad!

Pairs well with cauliflower rice or grain rice.

Ingredients:

  • 1 bunch asparagus ends trimmed
  • 10 oz peeled raw prawns - or shrimp
  • 1 tablespoon avocado oil
  • 2 garlic cloves minced
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon fresh ground pepper or to taste - omit for AIP
  • 1/2 lemon - meyer if available use 1 teaspoon juice & zest

How to Make:

  1. Preheat oven to 400° and place rack in the middle of the oven.
  2. Rinse the asparagus and remove the ends. For super thick asparagus - peel the bottom third as well.
  3. Rinse the prawns and lay them on a paper towel; cover with another paper towel and pat them dry.
  4. Add the prawns and asparagus to a large roasting pan, toss them with avocado oil and minced garlic, and then sprinkle with lemon zest, salt & pepper.
  5. Arrange them into a single layer and roast for 8-10 minutes - or until the asparagus is tender yet crisp and the prawns turn pink - take care not to overcook the prawns or they'll become tough.
    Tip: Cooking time may vary. If the asparagus are rather large and the prawns rather small, give the asparagus a five-minute head start before adding the prawns.
  6. Serve and garnish with a squeeze of lemon and fresh ground pepper.
