Eggy Ham Cups
These little eggy ham cups are a delicious and tasty breakfast, naturally low carb and easy to make ahead of time.

Did you know... Eggs are a great source of protein. Numerous vitamins, including vitamin A, potassium and many B vitamins like folic acid, choline and biotin, are also packed into this oval- shaped staple!

Pairs well with sliced avocado and fresh fruit.

Note: You can also use this recipe just as a base and get creative with your ingredients. Try adding grated onion, zucchini, spinach, kale, chard, peppers, mushrooms, chopped bacon, or sausage!
Adjust serving size: 


  • 1 white yam - or white sweet potato peeled & grated - about 2 cups
  • 6 eggs whisked
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 12 deli ham slices

How to Make:

  1. Preheat oven to 350° and place the rack in the middle of the oven.
  2. Peel and grate the sweet potato and place it into a medium-size mixing bowl. Add the eggs and seasonings, and using a fork, mix to combine.
  3. Line your muffin pan with the ham slices and, using a spoon, evenly distribute the egg mixture into the cups. Eggy Ham Cups
  4. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
