Egg & Sausage Mc Not-Muffin
A new twist on traditional a sandwich! Crunchy jicama fills in for the carb heavy bread in this tasty egg sandwich!

Did you know... Low in calories but high in vital nutrients, jicama is an excellent source of fiber and vitamin C.

Pairs well with a side of fresh fruit.
Adjust serving size: 


  • 1/2 large jicama - at least 4” diameter peeled & sliced
  • 1/2 teaspoon ghee - or grass fed butter
  • 1 egg scrambled
  • 1 precooked sausage - Applegate brand is great sliced
  • 1 roma tomato sliced
  • 1/4 cup mixed greens
  • 1 teaspoon mayonnaise

How to Make:

  1. Peel the jicama and slice into a large cube, then slice again into ¼” ‘bread-like’ slices. Set aside. Store remaining jicama for future use.
  2. Using a large skillet, warm the ghee over medium-high heat. Swirl to coat the pan. Pour in the egg, swirl the pan so the egg forms a large thin layer. Cook for a minute or two and then flip. Once fully cooked, remove it from the pan, cover and set aside.
  3. Wipe out the pan with a paper towel and add the sliced sausage; cook for a minute or two, then flip and turn off the heat.
  4. Layer in order of jicama slice, sausage, egg, tomato, greens, mayo, and then top with another jicama slice.
