These easy, healthy cauliflower bites are the perfect game-day snack!

Did you know…You may have heard that the most nutritious foods are the ones that have the most color, but that’s not the case with cauliflower! Just one cup provides 77% of the daily-recommended value vitamin C, 20% of vitamin K, and 10% or more of vitamin B-6 and folate.

How to Make:

  1. Preheat oven to 400° and place the rack in the middle of the oven. Line a large baking sheet with parchment paper.
  2. Place the almond flour, garlic powder and salt into a large bowl that has a lid {or use a bag} and set aside.
  3. Add the egg to a large bowl; whisk, and then add the {bite sized} cauliflower florets, and stir to coat. Make sure the florets are fully coated.
  4. Add the cauliflower to the bowl {or bag} that has the almond mixture, and then shake to coat the cauliflower.
  5. Arrange the cauliflower in a single layer on the baking sheet. Roast in the oven for 25-30 minutes, until browned and tender.
  6. Meanwhile, warm the buffalo sauce and ghee and whisk to combine.
  7. When the cauliflower is done, transfer it to a serving bowl. Evenly pour the buffalo sauce over it, and gently toss to coat - very gently, so that the breading stays on. Serve with sliced celery and ranch.
