How to Make:

  1. Preheat oven to 400° and place the rack in the middle of the oven. Line a large baking sheet with parchment paper.
  2. Place the almond flour, garlic powder and salt into a large bowl that has a lid {or use a bag} and set aside.
  3. Add the egg to a large bowl; whisk, and then add the {bite sized} cauliflower florets, and stir to coat. Make sure the florets are fully coated.
  4. Add the cauliflower to the bowl {or bag} that has the almond mixture, and then shake to coat the cauliflower.
  5. Arrange the cauliflower in a single layer on the baking sheet. Roast in the oven for 25-30 minutes, until browned and tender.
  6. Meanwhile, warm the buffalo sauce and ghee and whisk to combine.
  7. When the cauliflower is done, transfer it to a serving bowl. Evenly pour the buffalo sauce over it, and gently toss to coat - very gently, so that the breading stays on. Serve with sliced celery and ranch.
