Cod Salad in Cucumber Boats

Did you know... Cod is an excellent low-calorie source of protein {a 4oz serving contains over 21 grams!}, and contains a variety of important nutrients. It's very low in saturated fat and is also a good source of Vitamin B6, Vitamin B12, Niacin, Potassium, , Phosphorus and Selenium.
Adjust serving size: 


  • 1 wide cucumber
  • 3 oz wild cod - or similar white fish precooked & cooled
  • 1/4 roma tomato sliced and diced
  • 1 teaspoon red onion diced
  • 2 tablespoons raw unsalted sunflower seeds
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon fresh ground pepper plus garnish

How to Make:

  1. Slice the cucumber in half lengthwise {you may choose to peel it first if you prefer it without the skin} scrape the seeds out, so that you have a little trough for the cod salad, leaving a quarter-inch at each end.
  2. Place the remaining ingredients into a medium-sized mixing bowl and stir to combine.
  3. Spoon the cod salad into the cucumber boats and garnish with fresh ground pepper.
  4. Serve immediately or place in the refrigerator to chill.
