Citrusy Quinoa Salad with Avo, Fennel & Kale
Loaded with healthy kale and creamy avocado, this great quinoa recipe is both satisfying and full of flavor!

Often referred to as the supergrain, quinoa (KEEN-wah) is high in fiber and high-quality protein. In fact, it contains more protein than any other grain and also packs in iron and potassium.

Note: Quinoa should be cooked in advance.
Adjust serving size: 


  • 1 bunch green curly leaf kale de-stemmed and torn into pieces
  • 1 cup whole grain quinoa precooked
  • 2 carrot sliced thin
  • 1 fennel bulb sliced very thin
  • 3/4 avocado - ripe but firm sliced into cubes
  • 1/4 cup raw unsalted slivered almonds
  • Goddess Dressing
  • 2 green onion stems chopped
  • 1/2 lemon - meyer if available 1 tablespoon juice
  • 1/4 cup avocado oil
  • 1/4 avocado - ripe but firm
  • 1 teaspoon sea salt
  • 1/8 teaspoon fresh ground pepper plus garnish

How to Make:

  1. Prepare the quinoa in advance.
  2. Place all of the dressing ingredients into the bowl of a mini food processor {or blender}, then purée and set aside.
  3. Place the kale into a large bowl, add half of the dressing, then massage the kale until it begins to break down. You'll notice the kale is softer and darker once it’s broken down.
  4. Add the quinoa, carrots, fennel and the remaining dressing to the kale, and then toss lightly.
  5. Next, add the sliced avocado and almonds and give one last gentle toss.
  6. Garnish with fresh ground pepper and serve immediately.
