Note: The tart needs be prepared in advance and placed in the freezer until ready to use. Store any leftovers in the freezer as a special treat for later - you'll be glad you did!!

Ingredients:

  • Crust
  • 1 cup medjool dates pits removed
  • 1/2 cup raw unsalted almonds
  • 1 tablespoon virgin coconut oil
  • 1/4 teaspoon sea salt
  • Filling
  • 1/2 cup creamy raw almond butter or nut/seed butter of choice {excluding peanut}.
  • 1/2 cup virgin coconut oil
  • 1/2 cup raw cacao powder
  • 1/4 cup full fat coconut milk
  • 1/4 cup raw honey
  • 1/4 cup pure organic maple syrup
  • 1 tablespoon pure vanilla
  • 1/4 teaspoon sea salt
  • 6 jumbo sized unbleached muffin liners
  • Garnish
  • 1 cup berries of choice

How to Make:

  1. Line a jumbo muffin pan with six muffin liners. Or use a mini muffin pan for bite sized treats.
  2. Add the dates, almonds, coconut oil and sea salt to the bowl of a food processor and blend until finely chopped and breadcrumb-like.
  3. Add ¼ cup of the mixture to each liner and press it down to form the base.
    Tip: Use the bottom of a flat glass {a pint glass is perfect} to make a nice flat layer.
  4. Next, add all of the filling ingredients to the bowl of the food processor and purée until velvety smooth, stopping a couple of times to scrape down the sides.
  5. Start by adding ¼ cup to each liner, and then divide any remaining filling.
  6. Tap the pan on the counter a few times to even it out, and then place it in the freezer, on a flat surface to set.
  7. Serve straight from the freezer. Remove the liner, plate and garnish with fresh berries.
