Add a little spice to your life with these tasty chicken masala skewers! These can be served as an appetizer, or as a main course.

Did you know... If you're looking for a great source of protein, this bird is the word! Chicken is high in protein and jam-packed full of essential nutrients and vitamins.

Pairs well with cauliflower rice, grain rice or quinoa.

Note: You may be able to find pre-riced cauliflower at your local grocery store, Trader's and Costco usually cary it :)

How to Make:

  1. Soak the skewers in water {if wooden} for at least 20 minutes to prevent burning.
  2. Add all of the marinade ingredients to a medium bowl and whisk to combine. Add the sliced chicken to the marinade and place it into the refrigerator. Marinate for 5-30 minutes. Longer = more flavor!
  3. Meanwhile prepare the grill for cooking using medium-heat. You may also roast the chicken in the oven. For this option, preheat the oven to 400° and place the rack in the middle of the oven, then roast for about 20 minutes.
  4. Remove the chicken from the refrigerator and slide it onto the skewers.
  5. Grill for about 4-5 minutes on each side.
  6. Place all of the salad ingredients into a bowl and toss to combine.
  7. Plate the chicken and garnish with fresh parsley. Serve the salad on the side.
