Use store-bought dressing or choose from these amazing homemade dressings, my favorite is the champagne vinaigrette!

The bacon in this recipe should be cooked in advance.

Ingredients:

  • 6 oz boneless skinless chicken breast
  • 1/4 teaspoon avocado oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper omit for AIP
  • Salad
  • 1 head romaine lettuce sliced
  • 10 grape tomatoes halved / sub cucumber for AIP
  • 4 thick cut uncured bacon slices precooked & chopped

How to Make:

  1. Prepare the bacon in advance.
    This is a great recipe to make if you've already made some bacon in bulk at the beginning of the week {hint hint ;}
  2. Prepare the grill for cooking using medium-heat. You may also roast the chicken in the oven. For this option, preheat the oven to 400° and place the rack in the middle of the oven, then roast for about 20 minutes.
  3. Coat the chicken breast with a little oil, and then sprinkle with salt & pepper.
  4. Place the chicken breasts on the grill, close the lid, and then cook for 5-7 minutes. Flip and cook for an additional 5-7 minutes. This should be sufficient cooking time, unless the breasts are rather large.
    When done, the chicken should feel firm and look opaque. The best way to make sure they’re done is to use an instant-read thermometer. It should read 165° when inserted into the thickest part.
  5. Arrange all of the veggies into a bowl, add the chopped bacon and sliced grilled chicken, and then top with dressing of choice.

Notes:

If you're prepping this salad in advance, just chill the chicken before adding it to the salad so that everything stays fresh.
