This beautiful salmon dish is full of flavor and can be made in under 30 minutes!

Pairs well with cauliflower rice, grain rice or quinoa and/ or a colorful side salad.

Consider buying/cooking some extra salmon to make some salmon salad in cucumber boats for tomorrows lunch!

Ingredients:

  • 5 oz wild salmon
  • 1/4 teaspoon avocado oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper omit for AIP
  • 1/2 lemon - meyer if available sliced
  • Steamed Green Beans
  • 1/2 lb green beans ends trimmed
  • 1/2 teaspoon extra-virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper omit for AIP
  • 1/4 teaspoon red pepper flakes omit for AIP

How to Make:

  1. Preheat broiler and place the rack in the upper level of the oven – about 6-8" from the heat.
  2. Add spring water to the bottom of a double pot or pot with steamer basket and place over medium-high heat, cover and bring to a boil. Reduce the heat to medium-low for a light steam.
  3. Rinse and dry the salmon, and then place it onto a parchment lined baking sheet, coat with avocado oil and season with S&P.
  4. Broil for 8-10 minutes, or until the fish is opaque in the center.
  5. Meanwhile, cut the stems off the green beans and place them in the steamer basket.
  6. Steam for only about 5 minutes; they should be vibrant green and crisp when done.
  7. Plate the green beans and garnish with evoo, S&P, and the red pepper flakes. Add the salmon to the plate and garnish with a squeeze of lemon juice.
