These grain-free blueberry muffins are moist, sweet, and make the perfect quick snack or on-the-go breakfast!

This is mainly due to presence of Anthocyanin, a pigment responsible for the blue color of the blue berries. The abundance of vitamin-C is also a big factor for this impressive claim as well. How to Make:

  1. Preheat oven to 350° and place the rack in the middle of the oven.
  2. Line the muffin pan with the muffin liners.
  3. Over a medium-size mixing bowl, sift the almond flour, arrowroot, baking soda, baking powder and sea salt, and then stir to combine.
  4. Add the almond milk, eggs, honey, ghee, vanilla and lemon to a small-mixing bowl, and using a stand or hand mixer, mix well to combine. Transfer the wet ingredients to the dry bowl, and using the mixer, beat for about 2-3 minutes on medium speed until combined.
  5. Using a spoon or spatula, gently fold in the frozen blueberries and slivered almonds. You’ll want to add the batter to the muffin liners quickly to keep the blueberries from turning the batter ‘blue’.
  6. Divide the batter among the muffin liners {about 1/4 cup each}, then tap the bottom of the pan a few times to ensure there are no air bubbles and the muffin batter settles evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow muffins to cool before removing them from the pan.
