Blueberry & Coconut Granola
This tasty gluten-free granola includes dried blueberries, coconut, honey & oats.

Enjoy on its own as a trail mix, or topped with fresh fruit, berries, or non-dairy milk of your choice.

You can also use this recipe just as a base and get creative. Try any combination of nuts, seeds or spices to create your own unique cereal! Make it fun for the kids and let them decide!

Yields approximately twelve 1/3 cup servings.
Adjust serving size: 


  • 1/4 cup virgin coconut oil
  • 1/4 cup raw honey
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups whole rolled oats - gluten free
  • 1 cup raw unsalted slivered almonds
  • 1/2 cup raw unsalted pecans chopped
  • 1/2 cup ground flax seed
  • 1/2 cup dried blueberries
  • 1/2 cup unsweetened toasted coconut

How to Make:

  1. Preheat oven to 300° and place the rack in the middle of the oven.
  2. Melt the coconut oil and honey, and stir in the cinnamon and sea salt.Honey Nut Crunch
  3. Add the remaining ingredients {except for the blueberries & coconut} to a large bowl, pour the coconut oil over the mixture and toss to combine.
  4. Spread the mixture evenly onto a baking sheet and bake for 10-15 minutes, until very lightly toasted. Remove from the oven and toss in the blueberries & coconut.Honey Nut Crunch
  5. Chill before serving. Store in an airtight container and refrigerate.
