Did you know… Avocados are considered a “Super Food” because they are so rich in nutrients, vitamins and minerals. They are also a good source of monounsaturated fatty acids and are low in sugar.

Consider adding some grilled chicken breast for a main course salad!

Use store-bought dressing or choose from these amazing homemade dressings, my favorite is the champagne vinaigrette!
Adjust serving size:

  • 4 cups mixed greens
  • 4 radish sliced
  • 1/4 cup red onion sliced thin
  • 1/2 avocado - ripe but firm sliced
  • 1/4 cup crumbled goat cheese

How to Make:

  1. Arrange all of the veggies into a bowl, add the goat cheese, and top with dressing of choice.
